Ingredients

- 2large eggs
- 1teaspoonfresh lemon juice
- 0.25teaspoonred chili flakes
- 0.25teaspoonflaky sea salt
- 0.25teaspoonblack pepperfreshly ground
- 1teaspoonextra-virgin olive oil
- 1tablespoonfresh chivessnipped (optional)
Instructions

Toast sourdough until golden and crisp.

While bread toasts, halve avocado, remove pit, and scoop flesh into a bowl. Add lemon juice, salt, and pepper. Mash with a fork to desired consistency.

Heat a non-stick skillet over medium-low. Crack eggs in and cook sunny-side up until whites are set and yolks remain runny, about 3 minutes. Season with salt and pepper.

Spread mashed avocado generously on each toast slice.

Top with eggs, drizzle with olive oil, sprinkle with chili flakes and chives. Serve immediately.
