Ingredients

- 4ripe tomatoescut into wedges
- 0.5red onionthinly sliced
- 0.5cupKalamata olivespitted
- 8ozfeta cheeseblock, in brine
- 0.25cupextra-virgin olive oil
- 2tablespoonsfresh lemon juice
- 1teaspoondried oregano
- 0.5teaspoonkosher salt
- 2tablespoonsfresh mintchopped (optional)
Instructions

In a large bowl, combine cucumber, tomatoes, red onion, and olives.

Whisk together olive oil, lemon juice, oregano, and salt in a small bowl.

Pour dressing over vegetables and toss gently.

Transfer to a serving platter. Place the block of feta on top and drizzle with a little extra olive oil and oregano.

Garnish with fresh mint if using. Serve with crusty bread.
